The refurbishment of the bistro at the Empire Hotel repositions this Annandale landmark as a contemporary neighbourhood venue while retaining its Federation-era authenticity. The architectural approach was grounded in respect for the building’s layered history — stripping back later additions to reveal original brickwork, pressed metal ceilings, and timber detailing that give the space its enduring character. These heritage elements are offset by a restrained palette of new materials — oak, steel, and terrazzo — that introduce warmth and durability suited to the hotel’s daily rhythm.

The reconfiguration of the bistro floor plan enhances visual connection between the bar, dining, and courtyard areas, allowing the venue to flex between casual daytime use and intimate evening dining. A new central bar anchors the interior, crafted as both a functional hub and sculptural element that celebrates craftsmanship and honest materials. Natural light is drawn deep into the space through reinstated openings and soft interior finishes, creating a bright, inviting atmosphere that respects the building’s proportions.

From an architectural standpoint, the project is a study in balance — refining circulation and amenity while allowing the building’s original fabric to remain the hero. The result is a revitalised interior that feels both familiar and renewed: a bistro that embodies the history of Annandale’s pub culture, translated through a contemporary lens of urban hospitality design.
